Neiman Marcus Chocolate Chip Cookie Recipe

    Rich, soft,  chewy & slightly crispy  with a faint hint of coffee flavor

This Recipe comes directly from The Neiman Marcus kitchens.  They have always freely share their original recipe for these very popular cookies.  Because the  batter is so, thick it  does not  work well as small cookies ( Baked as smaller cookies, they can  get too hard)

Ingredients
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 3 tablespoons granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract ( Use KCJ Double Strength Pure Vanilla 2X)
  • 1/2 teaspoon baking soda     ***
  • 1/2 teaspoon baking powder ***
  • 1/2 teaspoon salt
  • 1-3/4 cups flour
  • 1-1/2 teaspoons instant espresso powder, slightly crushed
  • 8 ounces semisweet chocolate chips


Directions

  1. Cream the butter with the sugars until fluffy.
  2. Beat in the egg and the vanilla extract.
  3. Combine the dry ingredients and beat into the butter mixture.
    Stir in the chocolate chips.
  4. Drop by large spoonfuls onto a greased cookie sheet. Bake at 375 degrees                             for 8 to 10 minutes for soft & chewy , or 10 to 12 minutes for a crispier cookie.                  Makes 12 to 15 large cookies.

Tip to making great Neiman Marcus Chocolate Chip Cookies

***Eliminate the baking soda and increase the quantity of baking powder from 1/2 to one teaspoon of baking powder  (Be sure to use Rumford Baking Powder- It's aluminum free and doesn't have the bitter taste found in other brands)

1. Because the  batter is so thick they do not  work well as small cookies                                           ( smaller cookies can  get too hard)       

2. Stick to 8 minutes in the oven, this cookie remains chewy even after it cools.                                  For crispier cookies Bake 1-4 minutes longer         

3. Don't forget the coffee or the cookie will taste too sweet.

4. You can add  additional chips, nuts, dried fruits & berries  to the recipe without changing the texture.
