Ingredients
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 3 tablespoons granulated sugar
- 1 egg
- 2 teaspoons vanilla extract ( Use KCJ Double Strength Pure Vanilla
2X)
- 1/2 teaspoon baking soda ***
- 1/2 teaspoon baking powder ***
- 1/2 teaspoon salt
- 1-3/4 cups flour
- 1-1/2 teaspoons instant espresso powder, slightly crushed
- 8 ounces semisweet chocolate chips
Directions
- Cream the butter with the sugars until fluffy.
- Beat in the egg and the vanilla extract.
- Combine the dry ingredients and beat into the butter mixture.
Stir
in the chocolate chips.
- Drop by large spoonfuls onto a greased
cookie sheet. Bake at 375 degrees
for 8 to 10 minutes for soft & chewy , or 10 to 12 minutes for a
crispier cookie. Makes 12 to 15 large cookies.

Chocolate Chip Cookies
***Eliminate the baking soda and increase the
quantity of baking powder from 1/2 to one teaspoon of baking powder
(Be sure to use Rumford Baking Powder- It's aluminum free and doesn't
have the bitter taste found in other brands)
1. Because the batter is so thick they do not work well as
small cookies
( smaller cookies can get too hard)
2. Stick to 8 minutes in the oven, this cookie remains chewy even after
it cools. For
crispier cookies Bake 1-4 minutes longer
3. Don't forget the coffee or the cookie will taste too sweet.
4. You can add additional chips, nuts,
dried fruits & berries to the recipe without changing the texture.
